Stuffed eggs are a simple yet delicious snack perfect for a New Year's Eve party. Filling for eggs can be varied, but in the New Year it is worth stopping your attention on the most exquisite and original filling.
Filling with beetroot and herring
Ingredients:
- small boiled beets;
- 80-90 grams of salted herring (boneless fillet);
- 8 eggs;
- some fresh dill, parsley:
- mayonnaise;
- spices, salt.
Preparation:
1. Boil eggs until tender, cool and peel.
2. Peel the boiled beets and grate on a small grater.
3. Chop herring fillets finely enough, add to the beets.
4. Carefully cut the eggs in half. Mash the yolks and add to the beets with herring.
5. Wash greens and chop finely and finely. Mix with the rest of the filling.
6. Season the resulting filling with mayonnaise and salt, if required.

Filling with mushrooms
Ingredients:
- 7-8 eggs;
- 1 onion head;
- 1 carrot;

Preparation:
1. Boil the eggs, cover with cold water, peel after cooling.
2. Heat oil in a skillet and fry finely chopped onion.
3. Then add grated carrots to the onion in a frying pan, fry a little more.
4. Chop the mushrooms and pour over the onions and carrots, add salt, stir and fry for about 20 minutes.
5. After cooling, grind the filling with a blender and rub the egg yolks into it. Add mayonnaise, stir.
6. Stuff the whites, cut in half lengthwise, with the resulting filling.
Filling with salted pink salmon
Ingredients:
- 5 boiled eggs;
- 150-200 gr of salted or smoked pink salmon;
- a little greenery;
- mayonnaise.
Preparation:
1. Cut the boiled eggs in half. Mash the yolks in a separate bowl.
2. Cut the fish and herbs very finely and add to the yolks.
3. Mix the filling with mayonnaise and fill it with egg whites.
