Since ancient times, kvass has been loved in Russia. Of course, now this drink can be bought at any store. But will it be real? But what if you make kvass with your own hands from the simplest and most natural products?
Even the most common kvass can be prepared in completely different ways. But the base is the same: bread, yeast and sugar. And additional components in the form of lemon, raisins, berries and herbs will only emphasize the whole variety of this drink.
Traditional bread kvass
Required: 3 liters of water, 2 tbsp. tablespoons of raisins, 1 loaf of rye bread, 1 glass of sugar, 20 g of yeast.
Dry the sliced bread in the microwave or oven. Boil the water at this time. Pour the croutons laid out in a saucepan with boiling water, cover with a lid and leave to cool. After that, strain the water, add the rest of the ingredients (sugar and yeast), stir until dissolved and put in a warm place for 10 hours. Pour washed raisins into previously prepared clean and dry jars, pour in the starter culture, close with lids and send to a cold place for 2 days.
Kvass with lemon
Ingredients: 3-3, 5 liters of water, 400 g of rye bread, 20 g of yeast, half a lemon, 1 glass of sugar, 1 tbsp. a spoonful of raisins.
As in the previous recipe, prepare croutons. Put them in a saucepan and cover with cold boiled water. Cover and leave to infuse for 5-6 hours. Then strain, add yeast, sugar and juice squeezed from half a lemon. Stir, cover and leave in a warm place for 6 hours. After that, strain the kvass and pour into the prepared container not to the very top. Add washed and dried raisins to each container by handful. Close the lids and store in a cool place for 2-3 days.
Rosehip kvass
You will need: 3 liters of water, 0.5 kg of rose hips, 15 g of yeast, 1 glass of sugar, 2-3 slices of rye bread, half a lemon.
Rinse rose hips, mash and mix with sugar. Pour boiling water over, add bread and yeast diluted in warm water, lemon juice. Stir, cover and place in a warm place for several hours. Then strain, pour into containers, close and put in a dark, cold place for 3 days.
Kvass with thyme
Ingredients: 1 liter of ready-made traditional homemade kvass, 20 g of dried herb thyme, ¼ glass of sugar.
Preparation: pour 1 glass of kvass into a saucepan, add dried thyme, sugar, boil for 2 minutes. Pour in the rest of the kvass and leave to infuse for 10-12 hours. Then strain, pour into a container and put in the cold for 1-2 days.
Kvass with caraway seeds
You will need: 3 liters of water, 500 g of rye bread, 1 glass of sugar, 1, 5 tbsp. tablespoons of wheat flour, 1 tbsp. tablespoons of caraway seeds, 15 g of yeast.
Make croutons from the bread. Pour boiling water over them and leave at room temperature for 4 hours. Then strain, add sugar, caraway seeds, yeast, diluted in warm water with flour. Stir and leave in a warm place for 12 hours. Strain again and pour into clean containers. Close the lids and in the cold for two days.
