Delicious and appetizing minced fish balls stuffed on the outside, crispy and juicy on the inside. To prepare "Chestnuts" instead of minced fish, you can use chicken and turkey.

  • For minced meat:

  • - 0.5 cups of milk;

  • - 1 fresh pike (any fillet weighing 900 g);
  • - 100 g fresh white loaf (40 g dried).
  • For filling:
  • - 1 tbsp. a spoonful of dill;
  • - 4 cubes of butter;
  • - 2 tbsp. tablespoons of shrimp;
  • - 1 tbsp. spoon of onions.
  • For breading:
  • - 1 egg;
  • - salt pepper;
  • - 2 tbsp. tablespoons of flour;
  • - 200 g of a white loaf;
  • - vegetable oil for frying.

Step 1

Rinse the pike and fillet it. Cut off the head, tail and fins, leaving them on the ear. Cut the carcass lengthwise along the belly and remove the entrails with plastic wrap. Make minced meat. Fry chopped onions in butter until golden brown.

Step 2

First, dry the loaf in the oven, cut into medium pieces, so it will absorb moisture better. Then fill it with milk and let it stand for a while. Pass fish fillet, loaf with milk, onion twice through a meat grinder.

Step 3

Beat off a little minced meat, but do not overdo it, otherwise it will be too elastic. Gradually add the cream and whipped egg white. Beat off a little again.

Step 4

Prepare the filling by combining finely chopped shrimp, sautéed onion, and dill. Add pepper and salt. Pour flour into a flat plate. Beat the egg separately.

Step 5

In the process of sculpting "chestnuts", moisten your hands with warm water. Form a small tortilla out of the minced meat, place 1-2 teaspoons of the filling in the middle. Connect the edges of the cake and form an even ball. Dip it in flour, then in an egg, and then in croutons so that they cover the entire surface of the meat ball.

Fry the "chestnuts" in hot vegetable oil in a deep skillet or deep fryer. Fry on all sides for half a minute for one piece, until golden brown. Bring the dish to readiness by placing it in the oven for 15-20 minutes.
