It is necessary

    • For the test:
    • - 0.5 kg of flour;
    • - 5 - 7 g of dry yeast;
    • - 200 ml of milk;
    • - 2 eggs;
    • - 50 g butter;

    • - a pinch of salt.
    • For filling:
    • - 500 g of poppy;
    • - 100 g of butter;
    • - 100 g of honey;
    • - 1 glass of milk;
    • - 5 tbsp. tablespoons of sugar.

Instructions

Step 1

Place the dough dough. Warm the milk to room temperature. In a bowl, combine 100 ml of warm milk, 0.5 cups of flour and dry yeast. Stir thoroughly, pass the dough through a sieve so that the flour lumps are completely dissolved.

Step 2

Cover the bowl with cling film and put in a warm place for an hour. During this time, the dough will double.

Step 3

Melt the butter in warm milk, season with salt. Gently mix the butter and milk mixture with the matched brew.

Step 4

Separate the yolks from the whites. Rub the yolks with sugar or powdered sugar. Pour the yolk mass into the dough. Beat the cooled egg whites with a mixer until they become thick foam. Gently whisk the whipped egg whites into the dough. Add the remaining sifted flour and stir.

Step 5

Place the dough on a floured board. Knead the dough thoroughly for at least 10 minutes. The dough should not stick to your hands. Transfer it to a bowl, cover with a tea towel and leave to rise in a warm place for 1.5 to 2 hours. Then knead the dough, releasing air from it.

Step 6

Prepare the filling. Rinse the poppy seeds and pour boiling water over it for a few minutes. Then drain the water and refill the poppy with boiling water for a couple of minutes. After the poppy, dry it.

Step 7

Combine the poppy seeds with sugar and mince. Combine ground poppy seeds, milk, butter and honey in a saucepan. Sugar syrup can be used instead of honey. Simmer the filling over low heat for about 40 minutes, until the liquid evaporates. Cool the poppy filling. If the filling is liquid, add some semolina to thicken it.

Roll out the dough into a thin layer, about 1 cm thick. Spread the entire filling on the crust. Roll the filling into a roll. Do not roll the roll too tight, otherwise it will burst when cooked. Brush the roll with a beaten egg and place on an oiled baking sheet.

Step 9

Bake a roll with poppy seeds in an oven preheated to 180 - 200 ° C for about 30 - 40 minutes. If the top of the roll turns brown quickly, cover it with foil or baking paper. Cover the finished roll with a damp cloth and cool for 10 - 15 minutes.
