To prepare delicious homemade cheese, you need a minimum of products. Of course, the cheese made in the kitchen will be different from the industrial one. But it is no less tasty and, perhaps, more useful.
A simple recipe for homemade kefir cheese
To make homemade cheese, you need kefir. Thanks to the heating of this fermented milk product, it is separated into whey and protein. This is due to some manipulation of the additives. Ideally, very fresh kefir should be used for the cheese.
To make cheese you need to take:
- 2 l kefir
- salt to taste
Take a large saucepan. Pour kefir into it and put on low heat. Salt. Take salt at your discretion. If you want the cheese to be saltier, then the kefir should be slightly salted, since most of the salt will remain in the whey. When the food is heated, flakes will start to appear. As soon as you can see that the flakes separate well from the whey, remove the pan from the heat.
Cover the colander with gauze. Pour the kefir into a colander. To make the serum faster than glass, the contents should be stirred.
Then collect the milk mass together with gauze into a knot. Tie well. Place a load on a lump with a mass. You can leave it in a colander so that it is convenient for the remaining liquid (whey) to drain. Place the colander on the same pan. After the whey is completely released, the cheese is ready.
It is good in salads, it is also suitable for baking.
Curd cheese
For the next preparation of homemade cheese, you will need cottage cheese. The cheese turns out to be denser from cottage cheese. Its taste can be varied by adding herbs, mushrooms, honey, dried fruits, etc.
You need to take the following components:
- 2 liters of fatty kefir
- 2 tbsp. l. butter
- 1 egg
- 1h l. baking soda
- 1 tsp salt
- spices according to your preference
- Prepare cottage cheese from kefir. It is made according to the recipe given above. The difference is that the mass is not placed under the press. The knot with the future cottage cheese is suspended and the remaining whey is drained from it into the same pan, for example. You don't need to add salt at all.
- Place the finished cottage cheese in a dish that is suitable in size. Put everything from the list of ingredients into the product. Mix the contents well in a way convenient for you. You can use a blender, spoon, mashed potatoes, etc.
- Put the contents in the container (let it be a saucepan) in a steam bath and, stirring constantly, wait until it boils. Without ceasing to interfere, watch when the mass turns into a beautiful homogeneous yellow substance. It will take about 20 minutes. Pour into a prepared form, which is greased with oil or covered with foil. Allow the mass to harden. Homemade cottage cheese is ready.
When preparing this cheese, you can add herbs to it. Make it spicy or sweet. It all depends on your preference.
