Belgian cuisine combines the best culinary secrets of France and Germany. Fish soup with cream is a traditional first course in Belgium. To prepare it, you need a minimum set of ingredients.
It is necessary
- - 500 g of cod
- - 100 g of celery
- - 2 small potatoes
- - olive oil
- - ground black pepper
- - salt
- - Bay leaf
- - 1 tbsp. cream
- - 1 egg yolk
- - greens of dill and parsley
- - 1 small carrot
- - 1 stalk of leeks (it is better to take only the white part)
Instructions
Step 1
Boil the cod in lightly salted water. Pour the broth into a separate container, and divide the fish into small pieces, carefully removing all the bones.
Step 2
Cut the potatoes into small cubes, chop the celery into strips, grate the carrots on a fine grater. Leeks can be sliced into rings or chopped thoroughly with a knife.
Step 3
Fry the onions in olive oil until golden brown. Add grated carrots, celery, salt, black pepper and bay leaf to the contents of the pan. Mix all ingredients and fry for a few minutes over low heat.
Step 4
Mix the onion mixture with the broth and bring to a boil. Add fish pieces and potatoes. A few minutes before cooking, pour the cream into a saucepan and add the egg yolk. Stir the soup and bring to a boil again. Garnish the fish soup with chopped dill and parsley before serving.
