This is a simple dish and will only take about 40 minutes to cook. The meat turns out to be very tender and juicy, and mint gives the dish a special piquant aroma. If desired, the beans can be replaced with potatoes, then the dish will turn out to be a little more high-calorie.

It is necessary

  • - rabbit carcass;
  • - 300 g of canned or boiled beans;
  • - 2 large onions;
  • - 1 large carrot;
  • - 2 medium sized tomatoes;
  • - 50 g of prunes;
  • - 3-4 small cloves of garlic;
  • - a bunch of fresh mint;
  • - 250 ml of apple juice;
  • - 50 ml of soy sauce;
  • - 1 tbsp. a spoonful of vegetable oil;
  • - spices (oregano, dried basil, paprika) and salt - to taste.

Instructions

Step 1

Rinse the rabbit carcass and dry well with a towel. Cut into small pieces and place in a large baking dish. Salt the meat, sprinkle with spices and mix well. Pour in some of the apple juice (2-3 tablespoons), soy sauce and vegetable oil. Mix everything again. Add the garlic cloves, punctured in several places with a knife. Place the rabbit in the oven, preheating to 200 degrees, for 15 minutes.

Step 2

Chop the carrots and onions coarsely. First fry the onions in oil, and when browned add the carrots, prunes and diced tomatoes. Reduce heat and pour out the remaining apple juice. Cover the vegetables and cook for about 10 minutes.

Step 3

When the prunes are soaked, add finely chopped mint to the vegetable mixture, stir and turn off the heat. You can add a little water if the mixture is thick.

Step 4

In a mold, combine the vegetables with the rabbit meat. Add the cooked beans and cover the tin with foil. Bake in the oven for another 15 minutes. Then remove the foil and place in the oven for 2 minutes to brown the rabbit.
