Marshmallow cake is a delicate and sweet treat that is easy to make at home. Involve children in the process - they usually really like to cut marshmallows into slices and put them on a dish, smearing with cream. To make the cake even more delicious, add nuts, chocolate, fresh berries or fruits.
Custard and nuts cake
The advantage of a marshmallow cake is its ease of preparation. This dessert does not require baking, but it must be prepared in advance. For the cake to be well saturated with cream and not dry, let it stand in the refrigerator for at least a day.
You will need:
- 1 kg of marshmallows;
- 400 g of shelled walnuts;
- 100 g of sugar cookies;
- 2 eggs;
- 1 glass of milk;
- 1 tbsp. a spoonful of flour;
- 4 tbsp. tablespoons of sugar;
- a pinch of vanillin;
- 1 tbsp. a spoonful of grated lemon zest.
Divide the marshmallows into halves, and then cut each in half lengthwise. Grind nuts and cookies with a blender or mortar and mix thoroughly. Save a few pretty nut halves for decoration. Rub the lemon zest.
Make a custard. Mash the eggs thoroughly with sugar and vanilla, add flour and pour in the warmed milk. While stirring, cook the cream over low heat, rubbing the lumps. When the cream thickens, remove it from the stove and refrigerate.
Cover the round shape with parchment paper. Line the bottom of the mold with marshmallow strips, stacking them as tightly as possible. Spread the cream over the marshmallow and sprinkle with the nut and cookie mixture, followed by a little lemon zest. Repeat layers two to three times. Top the cake with the remaining cream and garnish with marshmallow tops and walnut halves. Place the mold in the refrigerator.
Fruit marshmallow cake
This cake can be made with different fruits. Use thinly sliced sweet oranges, canned pineapples, or peaches instead of strawberries.
You will need:
- 1 kg of vanilla marshmallow;
- 0.5 cups of thick cranberry jam;
- 500 ml of heavy cream;
- 0.5 cups of chopped walnuts;
- 200 g of ripe strawberries;
- 50 g of white chocolate.
Cut the marshmallows into thin slices. To make them cut easier, periodically dip the knife in hot water. Slice the strawberries thinly. Whip the cream into a strong foam. Fry the walnuts in a dry frying pan and crush them into coarse crumbs in a mortar.
Place a layer of marshmallows on a flat dish, brush them with whipped cream and sprinkle with chopped nuts. Spread the cranberry jam on top and spread the strawberry slices. Repeat layers 3-4 times. Lay out the marshmallow tops in the last layer so that the cake looks beautiful. Place the product in the refrigerator for 8-10 hours.
You can decorate the cake with white chocolate before serving. Steam it, pour it into a pastry syringe or bag with a cut corner. Apply strokes and zigzags to the surface, let the chocolate harden.
