Baking with apricots turns out to be very juicy and tasty. Pie-shaped muffins with large apricot pieces are especially flavorful. Sometimes poppy seeds, lemon or orange zest are added to the dough as desired.

- - 2 glasses of sugar;
- - 2 eggs;
- - 1/2 tablespoon baking powder;
- - 250 g fresh apricots;
- - vegetable oil;
- - 2 cups of flour.
Instructions
Step 1
Wash fresh apricots and remove pits. Dip in a pot of water and add 200 g of sugar. Simmer for 20 minutes.

Remove the apricots from the pan and cool. Cut into small pieces.

Mix butter, sugar and 2 eggs. Then add flour and baking powder. Mix all ingredients together thoroughly. You should get a thick dough.

You need to prepare paper molds. Lubricate them with sunflower oil. Then fill them halfway with the previously prepared dough. And put pieces of apricots on top.

Next, put the tins on a baking sheet and bake in a heated oven for 40 minutes.

After the cupcakes are cooked, you need to remove the molds and sprinkle with powdered sugar on top.
