We bring to your attention a light and original soup made from vegetables, green peas and herbs. It can be prepared in two versions. The first lean option is described below. And the second option, in addition to the indicated ingredients, also contains finely chopped and lightly fried ham.

Ingredients:

  • 1.5 liters of water;
  • 1 potato;
  • 1 onion;
  • 1 carrot;
  • 1 can of green peas (canned)
  • 4 cloves of garlic;
  • 100 ml sunflower oil;
  • greens;
  • (ham optional);
  • salt and spices ("For the first courses").

Preparation:

  1. Peel and wash potatoes, herbs, carrots, onions, garlic. Cut the potatoes into thin strips. Grate the carrots on a coarse grater. Just chop the onion, and pass the garlic through the garlic. Finely chop the greens with a knife.
  2. Pour all the oil into a frying pan and heat well.
  3. Put potato strips in hot oil and fry it until golden brown, stirring constantly. After frying, remove the straws with a slotted spoon, put on a plate and set aside for a while.
  4. Gently drain the oil from the pan, leaving only 2-3 tbsp. spoons.
  5. Put the garlic in the remaining oil and fry it until a beautiful golden crust.
  6. When the garlic acquires a golden hue, add onions and carrots to it. Mix everything well and fry for 5-7 minutes.
  7. Throw the ham into the soup if desired. If such a desire is present, then the sausage should be finely chopped and fried a little.
  8. Pour water into a saucepan, place on fire and bring to a boil. Put the fried potato strips together with spices and salt in boiling water. Then add vegetable frying there (and fried ham if desired), mix everything, boil and cook for 2-3 minutes.
  9. After a couple of minutes, open the peas and pour them into the soup without draining the syrup. Bring the soup to an intense boil and turn off.
  10. Add any chopped herbs to the turned off soup, then cover the saucepan and leave to stand for 10-15 minutes.
  11. Pour the present Princess and the Pea soup into plates and serve with your favorite bread.
