Step 1
Make a biscuit. Separate the yolks from the whites. Whisk the yolks with hot water. Pour granulated sugar in a thin stream and rub it white. Beat the whites until firm foam. Add cocoa powder, flour and baking powder, mix everything well. Combine with the yolk mass and stir until smooth.
Step 2
Line a baking dish with parchment paper and pour out the dough, spread over the surface. Bake in an oven preheated to 180 degrees for about 35-40 minutes. Check the readiness of the biscuit with a knife. Remove from oven and cool. Attach a plate and cut an even circle. Crumb the biscuit trimmings.
Step 3
Prepare the cream. Pour 100 ml of hot water over the gelatin. Use a blender to puree the bananas. Add cottage cheese and 160 g of granulated sugar, beat until the granulated sugar dissolves. Whisk in the cream. Add gelatin to the curd mass and stir. Add cream and mix everything well again, add grated chocolate.
Step 4
Place the biscuit on a dish and brush with cream. Sprinkle with crumbs on top and brush again with cream, lightly press with your hand. Sprinkle with cocoa powder. Refrigerate for 8-10 hours.
