Dissolve agar-agar powder in cold water, put on medium heat, bring to a boil and cook, stirring occasionally, for five minutes. Or follow the instructions on the package. Agar-agar flakes require preliminary soaking for 20 - 30 minutes, but after soaking they need to boil for only 1 minute. You will need a little more flakes than powder. Agar-agar is a gelling agent made from some types of algae. In addition to its gelling properties, agar-agar is also distinguished by its properties beneficial to the body. This is primarily due to the rich vitamin and mineral composition of algae, which is represented by such micro-macroelements and vitamins as iron, iodine, calcium, zinc, magnesium, B vitamins and omega-3 fatty acids. Also, agar agar is a mild natural laxative and helps burn fat. Thus, this substance is very useful not only for health, but also for the figure.

Pour the prepared agar-agar solution in a thin stream into the bean puree, without stopping whipping. Beat the mixture until it thickens enough and begins to separate from the walls of the pan.
