Step 1
There are special sets with a roaster and sand for making real Turkish coffee. By the way, this is a good gift idea for a coffee lover! But if you don't feel like spending money on such a kit, there is a cheaper option. Find a regular cast iron skillet, preferably deep. Get quartz fine sand, which can be obtained from glass factories or companies that sell equipment for coffee shops and restaurants.
Step 2
Coffee preparation does not tolerate fuss and carelessness. If you bring the drink to a boil, pour it out without regret! After the liquid reaches a temperature of 98-99 degrees, irreversible processes occur in coffee, the release of acids harmful to the human stomach begins.
Step 3
Pour sand into the skillet and place on the stove. Heat an empty turkey in the sand and add finely ground coffee to it. Ground coffee does not last long, so prepare exactly as much product as you need at the moment. Heat the powder a little in a Turk, do not overdo it.
Step 4
Put sugar and spices in the cezvu and pour ice water. Draw eights and circles with a Turk on hot sand so that the drink does not boil. Stir with a spoon about every two minutes. Monitor the condition of the coffee, as soon as it has risen and bubbles appear on the walls of the turkey, the drink is ready. Pour it gently into hot cups.
Step 5
Add a teaspoon of ice water to the finished coffee so that the thick settles. Do not drink this drink on an empty stomach, it can cause heartburn and, with systematic use, stomach ulcers. Serve Turkish coffee without a spoon, it must not be stirred.
Step 6
Try using ground coffee beans using the following original recipes. Heat the turk on the fire, add 1-1.5 grams of black pepper and four teaspoons of freshly ground coffee to it. Stir and pour in 100 ml of very cold water. Bring to a boil and add another 150 ml of water. Bring this mixture to a boil, add another 250 ml of water and boil for 5-10 minutes. Pour coffee and pepper into hot cups.
Step 7
Bring one liter of water to a boil, add 4 tablespoons of ground coffee and 80 grams of sugar, stir and let the drink brew a little. Pour it into cups. Pour 80 ml of rum or pure alcohol into a ladle and light it. While the flame is still burning, pour the contents over the cups of coffee. "Burning coffee" will warm you in any frost!
Step 8
Pour one tablespoon of freshly ground coffee and sugar to taste with 100 ml of water. Add anise, allspice, or cardamom, whatever you find at home. But the cayenne pepper on the tip of the knife is a must-have for Kenyan coffee. Then brew the drink as usual. Serve coffee in small, preheated cups.
