Stuffed squid can be served on a festive table as a full-fledged main course or as an appetizer. Recipes can be very different. But the most popular and favorite among housewives are squid stuffed with rice and eggs, as well as squid with mushrooms.

Stuffed squid are prepared in several stages. First, the seafood is cleaned of skin and chitinous plates, washed and boiled in water for several minutes. Then the filling is prepared. Then the carcasses are stuffed and baked in the oven or stewed in sauce over the fire.

Squid with rice and egg

You will need:

- frozen squid - 5 carcasses;

- rice (preferably long grain) - 2 full glasses;

- large chicken egg - 4 pcs. (if small - 5 pcs.);

- medium-sized turnip onions - 2 pcs.;

- parsley greens - 1 bunch;

- salt, pepper, other favorite spices - to taste.

Rinse the squid and thoroughly remove the skin and chitinous plates. The skins of thawed raw squid are very easy to peel off. Pour water into a saucepan and bring to a boil. Throw in the squid and cook for a few minutes until half cooked.

Boil the eggs, peel and chop finely. Chop the onion finely and fry in vegetable oil until golden brown. Mix pre-boiled rice with the rest of the ingredients, add medium-sized chopped greens. Season with salt and pepper.

Stuff the cooked and cooled squid with the cooked filling. Sew up the exposed part with thread or use a toothpick to stab. Place in a preheated oven on a greased baking sheet to cook over medium heat. Bake the squid until golden brown.

Squid recipe with mushrooms and cheese

- fresh frozen squid - 6 carcasses;

- fresh champignons - 250 g;

- hard cheese (preferably Parmesan) - 250 g

- medium-sized onion turnip - 1 pc.;

- garlic - 4-5 cloves;

- fresh tomatoes - 2 pcs;

- mayonnaise - 1 tablespoon:

- pitted olives - 3 things.

Peel and rinse the squid under running water. Place in boiling water and cook for 3 minutes. Finely chop the champignons and fry in a pan with onions and tomatoes until almost cooked. Divide the coarsely grated cheese into three parts. Mix two parts with mushrooms. And leave one part of the cheese for the finishing decoration of the finished dish.

Stuff the squid with the filling and simmer in a frying pan in a little water with spices for 5 - 6 minutes.

Decorate the finished dish with olives, add a little mayonnaise.
