Millet is a very useful and nutritious cereal, but not everyone likes millet porridge. To fight off the characteristic flavor of millet, many housewives come up with all kinds of recipes for dishes with various additives. Millet muffin with carrots and fried onions is a hearty and tasty dish that even children eat with pleasure. Delicate yoghurt sauce gives it a special piquancy and softness. This cake can be used as an independent dish and offered as an original side dish for meat, poultry or fish.
It is necessary
- - 1 large onion;
- - 1 large carrot;
- - 300 grams of millet;
- - 2 tablespoons of vegetable oil;
- - 500 ml of vegetable broth or water;
- - 100 grams of hard cheese;
- - 200 grams of soft low-fat cottage cheese;
- - 2 eggs;
- - oil for lubricating the mold;
- - bread crumbs;
- - 2 tbsp. tablespoons of a dried mixture of aromatic herbs (to taste), salt;
- - 300 grams of creamy yogurt for the sauce.
Instructions
Step 1
Rinse the millet, pour boiling water for 5 minutes, then put it on a sieve and let the water drain completely. Peel and rinse the onions and carrots, finely chop the onion, grate the carrots on a coarse grater. Grate the cheese just as coarsely.
Step 2
Heat vegetable oil in a frying pan, fry the onion until golden brown, add millet and broth (water), bring to a boil and simmer under a lid over low heat for 30 minutes. Refrigerate for an hour.
Step 3
Separate the yolks from the whites. Yolks, cottage cheese, grated cheese and carrots, as well as 1 tablespoon of aromatic herbs and salt to taste, add to the millet with onions and mix. Beat the whites into a strong foam and mix gently with the bulk.
Step 4
Preheat oven to 200 degrees. Grease a baking dish with any oil, sprinkle with breadcrumbs. Place the pan in the oven on a medium level and bake the cake for 1 hour. Refrigerate, then remove and cut into portions.
Step 5
To prepare the sauce, beat the yogurt, add salt, pepper, aromatic herbs. Or, as an option, finely chopped dill, green onions, chopped garlic in a press. Serve the sauce with the millet cake.
