Zucchini loses many of its nutritional properties when fried, so they are not cooked in this recipe. It turns out to be a light, tasty and healthy snack. Nuts and caramelized onions perfectly complement the taste of young courgettes.
It is necessary
- - 2 young zucchini;
- - 3 onions;
- - 1 bunch of parsley;
- - a handful of walnuts;
- - 2 cloves of garlic;
- - 2 tbsp. spoons of soy sauce, vegetable oil;
- - 1 tbsp. a spoonful of sugar;
- - 1 teaspoon of chili petals;
- - ground black pepper.
Instructions
Step 1
Rinse the young zucchini, peel them, but this is not necessary. Cut into slices about 1 centimeter thick, then cut into thin strips with a peeler.
Step 2
Brown the walnuts in a dry skillet, cool, remove the skin. Peel the onions, cut into half rings, send them to the pan with vegetable oil. The onion should soften a little, then add the chopped garlic, stir, pour in the soy sauce. Season with chili petals and ground black pepper. Cook for a few minutes, then add sugar. Bring to a light caramel, stirring constantly. Turn off the heat under the skillet.
Step 3
Grind the walnuts in a blender until crumbled. Add to onion, stir. Rinse the bunch of parsley, chop coarsely, add to the nut-onion mixture, stir. The warmth will reveal the aroma of fresh parsley without destroying its beneficial properties.
Step 4
Now it remains to mix the zucchini with nuts and herbs, while the contents of the pan are still slightly warm. Zucchini with nuts and caramelized onions are ready, you can let them brew for 30 minutes or serve the appetizer right away.
