I want to share a recipe for delicious custard donuts. They are not difficult to prepare. It turns out very tasty and airy.

DONUT DOUGH:
-Take flour (before that you need to sift it thoroughly), slightly warmed milk, yeast (before using yeast, you first need to check it. You can make a dough. Take 50 ml of milk, 0, 5 tablespoons of sugar, pour a little yeast. And 1-2 teaspoons If the dough comes up and is covered with bubbles, all yeast can be used for baking), sugar and eggs and knead the tender airy dough.
When kneading the dough, you need to remember that yeast dough loves hands. And it is advisable to knead the dough for 15-20 minutes.
-When all ingredients are collected in one lump, add oil at room temperature. It should be soft so that you can easily mix it into the dough. Therefore, it is advisable to get the oil out of the refrigerator a couple of hours before cooking. (the butter can be whipped separately if desired, it will be airy and soft, and easily interfere with the dough). And we finish kneading the dough.
-The finished dough should be sent to a warm place for 1-1.5 hours. A slightly preheated oven is also good.
-When the dough comes up, divide it into 30-40 gr. and roll the balls.
-And the finished balls are left to rise for an hour.
-When the balls have risen and doubled in size, prepare a frying pan and fry until golden brown in well-heated oil.
Step 2
CUSTARD
When our donuts are ready, there is very little left, you need to make the custard.
We take milk (the fat content of milk does not matter) and bring it to a boil.
In a bowl, beat the yolks with sugar. They should turn white and grow in size.
Add flour to the finished mixture a little bit and beat well, then pour hot milk in a thin stream, mix well again and put in a ladle on the stove.
Now you need to brew the cream very carefully. If you overcook the mass, the yolks can curl. The cream must be constantly mixed. As soon as the cream begins to thicken, the cream must be removed from the heat.
Step 3
ASSEMBLY
Now that the donuts and cream are ready, all that remains is to fill them.
You can start as you like, either with a nozzle or a disposable pastry bag.
When everything is ready, sprinkle with icing sugar.
