Prepare this exquisite and delicate pancake cake for your loved ones. Instead of apples, you can use any other fruits, berries or nuts.
It is necessary
- 15 pancakes according to any recipe (the main thing is that the pancakes are thin and elastic);
- 500 g apples;
- sugar - to taste (depending on the acidity of the apples);
- 1 tsp cinnamon.
- For the chocolate custard:
- 500 ml of fresh milk;
- 4 yolks;
- 100 g of chocolate;
- 30 g sugar.
Instructions
Step 1
Preparing the cream. Rub the yolks well with sugar. Heat the milk almost to a boil, but do not boil it. We follow closely! Pour hot milk into the yolks, pounded with sugar, in small portions. We do this very carefully, after each portion of the poured milk, mix thoroughly so that we do not get an omelet. Pour the mixture back into the saucepan and put on a small fire. Cook the mixture until thickened, stirring continuously. Never stop stirring the cream, otherwise it may burn or curl. It usually takes about 10 minutes for the mixture to thicken.
Step 2
Break the chocolate into small pieces and add it to the still hot cream. Let's leave the cream to cool and start with the apples.
Step 3
Peel the apples and cut them into small cubes. Melt the butter in a frying pan and put the apples on it. Add sugar (if you are using sweet apples, then one tablespoon of sugar is enough, if the apples are sour, then you will need more sugar). Cover the pan with a lid and simmer the apples over medium heat until soft. This can take anywhere from 5 to 15 minutes, depending on the apple variety. Add cinnamon to the stewed apples and leave them to cool. In the meantime, let's start assembling the cake.
Step 4
We assemble our cake by stacking the pancakes on top of each other and brushing each of them with chocolate custard. Also grease the top pancake with cream.
Step 5
The final touch: put the apples on the cake.

Place the cake in the refrigerator for 3-4 hours, or better overnight.
