It is necessary
- - 2 large salmon fillets, 450 g each;
- - flounder fillet - 250 g;
- - fresh frozen green peas - 300 g;
- - carrots - 1 pc;
- - fresh white bread without a crust - 250 g;
- - milk - 100 ml;
- - egg white - 1 pc;
- - parsley - 2 branches;
- - nutmeg - a pinch;
- - olive oil;
- - salt;
- - pepper.
Instructions
Step 1
Pour water into a saucepan, salt it. As soon as it boils, dip the peeled carrots in it and cook for 10 minutes. After the carrots have cooled, cut them into small cubes. Take another saucepan and boil the fresh frozen green peas for 6 minutes, then cool them down. With parsley, you need to do this: wash, dry, divide into leaves and cut them.
Step 2
Next, you need to soak the pulp of white bread in milk. The fillet of flounder will play the role of a filling, so it must be chopped in a blender to a puree state. Combine the following ingredients: fish puree, lightly pressed bread, nutmeg, egg white, boiled green peas, diced carrots, parsley, salt and pepper. Mix the resulting mixture thoroughly, then refrigerate.
Step 3
On one of the salmon fillets, it is necessary to cut a longitudinal piece, the width of which is about 3 centimeters, where the thickened part is located. As a result, the abdomen and back should be equal in thickness.
Step 4
On the second salmon fillet, you also need to make cuts, but only in a slightly different way. Where the thickened part of the fillet is, make deep longitudinal cuts on the left and right so that 1.5 centimeters remain to the edge. Open the resulting cuts.
Step 5
Put the prepared filling in the center of the first salmon fillet, but not all, but only half. It must be laid out in such a way that at least 5 free centimeters remain from each edge. Then place the piece of fillet that was cut on the filling.
Step 6
Place the remaining filling on top of the fillet and top with the second fillet. Now you need to fix the fillet edges with wooden toothpicks. Grease the dish with olive oil, wrap it in foil, then put it in the oven for 35 minutes at 200 degrees. After the time has elapsed, take out the roll and refrigerate. When serving, cut into small pieces. The festive salmon roll is ready!
