It is necessary

    • 1 large carp;
    • 1 onion;
    • 200 g of mushrooms;
    • 100 g of buckwheat;
    • 3-4 cloves of garlic;
    • 150 g sour cream;
    • 20 g butter;
    • vegetable oil;
    • breadcrumbs (optional);
    • salt and pepper.

Step 1

Prepare your carp. Leave the frozen fish at room temperature for 1-2 hours before thawing, start cutting chilled immediately. Wash the carp thoroughly, remove the scales, leaving the skin. Gut the fish if necessary. To do this, make a longitudinal incision on the belly and remove all the insides through it. Remember to remove the gills. Try to do this carefully, as, for example, damage to the gallbladder during removal may result in the fish becoming bitter. Wash the gutted carp again inside and out. The tail and head do not need to be touched.

Step 2

Take care of the stuffing. Sort the buckwheat and place in a hot dry frying pan, preferably with a non-stick coating. Cook for 1-2 minutes, stirring constantly. After that, transfer the cereal to a saucepan and cover with water. Cook for about 20 minutes, longer if necessary. Buckwheat should become soft and crumbly. At the end of cooking, add a little butter, stir, remove from heat and cover. Let the porridge stand for 10-15 minutes.

Peel the onion and chop finely. Fry it in hot oil for 3-4 minutes. Then add the chopped garlic to it and cook for another 2-3 minutes. Rinse the mushrooms, cut, if they are large, add to the onion. Cook for 5 minutes, stirring occasionally. After that, put the porridge and sour cream in the pan. Season with salt and pepper. Mix everything, wait another 2-3 minutes and remove from heat.

Step 4

Additional vegetables, such as carrots, can be added to the filling if desired. To do this, cut it into strips and fry it with onions.

Step 5

Stuff the carp with the resulting filling. Sprinkle it with freshly ground pepper and coarse salt on top. If desired, you can add bread crumbs. Place the carp on a greased baking sheet. Top the carp with a little sour cream. Bake the fish for about 40 minutes. This dish can be served without a side dish.
