Step 1

Old English Raspberry Jam

There are very few gelling substances in raspberries, but currants contain pectin in excess. That is why, if you combine these two berries, you get a delicious thick jam, in which the currant sourness will only emphasize the sweet taste of raspberries.

Step 2

Sort out currants and raspberries, remove stalks and twigs, rinse and dry. Raspberries are delicate berries, so it is better to rinse them not under running water, but by lowering a colander filled with aromatic selected berries into a container of water.

Step 3

Pour water into a small saucepan, bring to a boil and add currants, reduce heat to low and cook for about 15 minutes. Remove from heat, refrigerate and rub through a sieve. If the mesh is too large, cover it with several layers of gauze. Or you can simply squeeze the juice through a gauze cloth. You need to get about as much juice, by weight, as you took currants.

Step 4

Put raspberries in currant juice and simmer the jam over low heat for at least 15-20 minutes. Stir the jam periodically and knead the berries with a wooden spoon. When you have a single scarlet mass, bring it to a boil and simmer for 2-3 minutes. Remove from heat and, while stirring, add sugar in a thin stream.

Step 5

Return the bowl of jam to the stove and simmer over high heat for about 10 minutes. Remove the foam from the surface of the fragrant delicacy, let it cool slightly and arrange in sterilized jars.

Blackberry-raspberry jam

You can also cook the jam in the classic, but more familiar way. To make it unusual and interesting, add its close relative - blackberries to the raspberries.

Step 7

Without mixing, sort, rinse and dry the berries. Cover them separately with sugar (there is the same amount of sugar for each kilogram of berries). Stir the berries and granulated sugar, leave overnight to let the juice stand out. If you mix the berries right away, and not later, when boiling, you will not get the beautiful raspberry color of the final product, so you should not simplify the process.

Step 8

Pour the juice mixed with sugar into a bowl for jam. Bring, remembering to stir constantly, to a boil, put the berries and reduce the heat to low. Cook for 5-7 minutes, stirring and skimming as well. Remove from heat and let the jam cool completely, you can even leave it overnight. Return the bowl to the heat and bring to a boil again, reduce heat to medium and cook for another 5-7 minutes. Turn off the heat, let the jam cool slightly and place in sterilized jars.
