Chicken enchiladas is a Mexican dish. It looks like a Spanish tortilla with a delicious filling that is rolled into a roll. But in this case, there are many small rolls - they are baked together in a mold with hot sauce. You can choose the filling at your discretion - meat, vegetable. The dish with minced chicken filling will turn out to be very tasty.

- - 80 ml of vegetable oil;
- - 800 g of minced chicken;
- - 1 onion;
- - 5 cloves of garlic;
- - 2 chili peppers;
- - 300 g of cheddar cheese;
- - 5 pieces. tortillas;
- - salt, cilantro, sugar, black pepper, ground chili pepper, oregano, smoke.

Step 1
Let's start by making the sauce. Peel the garlic and onion, chop finely. Remove the seeds from the chili pepper, chop it too.

Pour oil into a frying pan, fry the prepared ingredients. Then add the tomatoes in their own juice, salt, sugar, black pepper. Simmer for 5 minutes, stirring occasionally. So we got a hot sauce.

In another skillet, fry the minced chicken in oil, add salt, red pepper, cilantro, cumin and oregano to taste. Cook for 10 minutes, stirring occasionally.

Grate the cheddar cheese. Turn on the preheat oven to 180 degrees.

Pour some of the sauce into a baking dish.

Heat the tortillas in the microwave to soften them. Then put a part of the minced meat on each cake, sprinkle with cheese, roll into a roll.

Fold the resulting tubes into the shape with the seam down, pour over the rest of the sauce, sprinkle with the sauce. Put in the oven for 20 minutes - during this time the cheese will brown.
