- 2 tablespoons chopped fresh ginger, peeled
- 1 1/3 cups flour
- 2 tablespoons of sugar;

- 1 egg yolk from a large chicken egg;
- 2 tablespoons (or more) ice water.
- Filling:
- 350 grams of peeled and chopped pumpkin;
- 1 1/2 cups whipped cream
- 3 large chicken eggs;
- ½ cup sugar;
- ¼ cups of caramelized brown sugar
- ½ teaspoon ground cinnamon;
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- Crumble:
- 1 cup flour
- 1 1/2 cups caramelized brown sugar
- 1/2 cup coarsely chopped walnuts (about 75 grams)
- ¼ a glass of finely chopped candied ginger;
- 1 ½ teaspoon ground ginger
- 1/2 cup unsalted butter.
Instructions
Step 1
Start your pie with the base. Place the peeled fresh ginger in a blender or food processor and blend until puree.
Step 2
Take out the mixing bowl and put the ginger puree in it, add sifted flour, sugar and salt, and ground cloves. Stir all the ingredients with a special silicone spatula or ordinary spoon.
Step 3
Cut the butter into small pieces and add to the spice flour. Knead the dough by hand or using a food processor with a guitar attachment.
Step 4
Use a whisk or fork to combine the yolk and ice water in a separate bowl.
Step 5
Add the yolk mixture to the dough. If the dough is too dry, add a teaspoon of ice water to it.
Step 6
Gather the dough into a smooth ball, wrap in plastic wrap and refrigerate for one hour. You can prepare such a dough in advance, for example, one day before baking the cake.
Step 7
Preheat the oven to 175 degrees C. Roll out the dough on a floured surface. Get a circle with a diameter of 30 centimeters. Lay out in a mold so that about 2.5 centimeters hangs around the edge. Form beautiful bumpers from this dough. They should rise about 1 centimeter above the form.

Place the baking dish in the freezer for 15 minutes. Cover the dough with foil or baking paper and fill the baking dish with dried beans, peas or special balls for baking the base.

Bake the dough for about 10 minutes, until pale golden brown. Remove filler and paper or foil. Bake for another 10 minutes. Take out the base and let it cool completely.
Step 10
Take care of the stuffing. Use a spoon to combine all the ingredients in a large bowl. Lay out on the base. Return the pie to the oven and bake for another 50 minutes. Remove the pie from the oven and let it “rest” for 10 minutes. Do not turn off the oven.

Make crumble, a crunchy crumb made from shortcrust pastry. Combine everything except the butter in a bowl.
Step 12
Cut butter into small pieces and add to a bowl. Use your fingers to mix the butter, flour, nuts, and spices. Do it in such movements as if you are rubbing the mixture between your fingers. You don't need to get a smooth paste. Your task is to make a crumb.
Step 13
Sprinkle the peanuts over the cake. Place it in a preheated oven and bake for another 20-25 minutes, until the crumble is golden brown. Let the cake cool and serve.
