Pumpkin is a popular melon crop. Soups, salads, main courses, desserts and even preparations for the winter are made from it. Armenians prefer to eat baked pumpkin, while in Russia it is most often used for making porridge. This product can also be consumed by those people who are obese, because pumpkin, despite its high nutritional value, has a low calorie content.
Pumpkin salad
You will need: 400 grams of pumpkin, 2 pickles, 1-2 tomatoes, 1 small onion, about 60 ml of vegetable oil, ¼ and the same amount of 3% table vinegar, ½ tsp. salt, 1 tsp. sugar, pepper to taste, herbs.
Prepare the salad dressing first. To do this, mix vegetable oil with vinegar, add salt, sugar, ground black pepper, stir everything until smooth.
Cut the peeled melons into small cubes, then boil in slightly salted water, drain the broth, cool the pumpkin. Cut cucumbers and tomatoes into cubes. Finely chop the onion. Mix everything, add salad dressing. Place in a salad bowl and garnish with herbs.
Avar pumpkin
You will need: 2 pumpkins, tomatoes, garlic, parsley, salt, black pepper, vegetable oil to taste.
Peel the pumpkin from seeds and skin. Prepare minced meat from one pumpkin. To do this, cut the pumpkin pulp into pieces, cut the tomatoes into small slices, chop the garlic with parsley, salt and pepper, mix everything and fry in vegetable oil.
Fill the second pumpkin with prepared minced meat. Put chopped tomatoes on the bottom of a deep dish, put the stuffed pumpkin on them, pour in cold water so that it does not completely cover the pumpkin, salt, cover the dish and simmer the dish until tender.
Pumpkin roast
You will need: 1 medium-sized pumpkin, a few tomatoes, 1-2 bell peppers, a head of garlic, 2-3 tbsp. vegetable oil, salt, black pepper, herbs, parsley to taste.
Prepare the pumpkin by peeling and removing the seeds. Cut into slices, place in a deep skillet with butter and fry. Add finely chopped tomatoes, bell peppers, garlic, parsley, salt, black pepper. Mix everything, cover the pan with a lid and simmer until tender.
Pumpkin casserole
You will need: a quarter of a small pumpkin, 2 cups of boiled rice, half a glass of raisins, honey, oil to taste.
Cut the pumpkin peeled from the peel into cubes, pour in boiled rice, raisins, honey. Mix everything, put in a pot of butter or in a frying pan, bake in the oven.
