Hummus is a chickpea snack with sesame paste (also called tahini), olive oil and various spices. You can eat hummus like chopsticks made from fresh vegetables (cucumbers, carrots, celery, bell peppers), slices of toasted pita bread, or even with nachos chips. It all depends only on your preferences.

  • 4. Olive oil - 2 tablespoons
  • 5. Cherry tomatoes - 4-5 pieces
  • 6. Garlic - 1 head
  • 7. Lemon - a slice about 1.5 cm wide
  • 8. Salt
  • 9. Smoked paprika
  • 10. Zira - 1/2 teaspoon
  • 11. Butter - 1 tablespoon

Step 1

Traditional hummus did not suit my taste in any way. Something was missing in his taste, it seemed that he was not fully revealed. I kept thinking how to diversify hummus to make it very tasty? I added baked tomatoes, smoked paprika and garlic. The appetizer immediately changed and played with new colors. If you like trying something unusual, exploring new combinations of tastes, then I highly recommend making hummus with tomatoes and garlic. This is delicious!

Rinse the chickpeas and soak in plenty of water overnight.

In the morning, rinse the chickpeas again, add cold water again, add baking soda and stir. Put on medium heat and cook for 40 minutes. Then drain the water and set the chickpeas aside to cool.

As the chickpea cools down, it needs to be peeled.

Step 4

Fry sesame seeds in a dry skillet until golden brown.

Step 5

Put the fried sesame seeds in a blender (or mortar) and chop. Add olive oil to it and punch (if done in a mortar, then grind) until a homogeneous paste.

Step 6

Coarsely chop 5 cloves of garlic, mix with cumin. Send to a skillet along with butter and fry until a delicious smell appears. After that, add the cherry tomatoes, cut into halves, and fry until the baked edges appear on the tomatoes.

Puree the contents of the pan and boil a little. Set aside.

Step 7

In a blender bowl, add the sesame paste, peeled chickpeas, tomato puree, chopped lemon, smoked paprika, salt and the remaining garlic. Punch until smooth.

Taste ready-made hummus and add salt, paprika or lemon as needed.

Cool the finished chickpeas. Then transfer to a beautiful bowl for serving, garnish with olive oil, dried tomatoes and herbs.
