French eggplant is a very tasty and simple dish. It sounds unusual and you think it is difficult to cook. In fact, everything is easy. Try to cook, you won't regret it.

- - 3 medium eggplants,
- - 2 sweet peppers,
- - 2 onions,
- - 3 tomatoes,
- - 150 g of hard cheese,
- - 1 pack of mayonnaise (~ 200-250 g),
- - salt,
- - parsley and basil.
Instructions
Step 1
Cut the eggplants lengthwise into plates, each into 4-5 pieces. Season with salt and leave for 30 minutes, then squeeze out the liquid.
Step 2
Put half of the chopped eggplants on a greased baking sheet, set the other aside. Put onions and bell peppers, cut into half rings, and tomatoes in semicircles on the strips of eggplant.
Step 3
Sprinkle the vegetables with half of the coarsely grated cheese on top and cover with the remaining strips of eggplant. Grease our dish with mayonnaise. Then sprinkle with cheese.
Step 4
Bake in the oven for about 50 minutes. at a temperature of 200 degrees. Place a clean baking sheet one level higher than the eggplant baking sheet so that the cheese does not burn.
We take out the finished dish and serve hot.
