- For porridge:
- -1/2 cup dry red quinoa
- -1 and 1/2 cups soy milk
- -1 tsp ground cinnamon
- -1/2 tsp vanilla extract
- -1/4 tsp kosher salt
- -1 1/2 tbsp. maple syrup
- - fresh ground nutmeg
- -1 tsp tea powder
- -1/4 cup frozen or fresh blueberries
- For seasoning / filling:
- -1/4 cup chopped nuts (pecans and walnuts)
- -chia seeds
- -lemon zest
- - freshly squeezed lemon juice
Instructions
Step 1
In a medium saucepan, combine all porridge ingredients (except blueberries). Bring to a boil over medium heat, then reduce heat and simmer for 15-20 minutes (stirring occasionally). Quinoa should resemble oatmeal in consistency.
Step 2
Remove from heat and stir in blueberries. Blueberries should be dipped in hot porridge, so it will warm up and fill with juice inside.
Step 3
Go ahead and prepare the filling. Rub some lemon zest. Add nuts.
Step 4
Add milk to the porridge if desired. Bon Appetit!
