The packaging also indicates the term for sorting, packaging.

The shelf life is determined by the brand "D" or "C" (dietary or table eggs). For the first, the implementation period should be 7 days, for the second - 25.

Although eggs can be stored for a long time even at room temperature, it is obviously best to choose the one with the closest sorting date out of all packages.

The category of eggs is determined by their weight:

- B (highest category) - egg weight 75 grams or more.

- O (selected eggs) - 65 g or more (not including the lower limit of the mass of eggs of the highest category).

- 1 (first category) - 55 g and more (up to the elite).

- 2 (second category) - 45 and more (up to category 1).

- 3 (third category) - 35 and more (up to category 2).

Despite the fact that eggs of 2-3 categories are small, they are not bad, their quality is not lower than those in which the category is higher. Therefore, giving preference to a particular category does not make much sense.

Does not affect egg quality and shell color. Brown or white, it can be any, the main thing is that the eggs are fresh and stored in the right conditions. But it is worth checking the integrity of the shell. You should not buy eggs even with minor cracks in the shell, even if they are sold at a discount.
