Musaka is a very popular and amazingly tasty dish of the Balkan peoples and the Middle East. Moussaka is prepared mainly from minced meat and eggplant, but each nation has its own variation on the filling for this delicious casserole.

- - 3-4 small eggplants
- - 0, 5 tbsp. olive oil
- - 1 onion
- - 3 cloves of garlic
- - 700 g minced pork and beef
- - 0, 25 st. red wine
- - pepper, nutmeg, salt
- - 4 tomatoes
- - 200 g of hard cheese
- - 2 tbsp. butter
- - 2 tbsp. flour
- - 2, 5 tbsp. milk
- - 2 eggs
Instructions
Step 1
Wash and peel the eggplants, cut into small slices and salt liberally, leaving them for 10-15 minutes. Squeezing out the juice, fry the vegetables in well-heated oil and place on a paper towel to remove excess oil. Peel and chop the garlic and onion, fry the vegetables in the same oil for a few minutes. Add a little oil if necessary.
Step 2
Now place the minced meat in the pan, fry it, stirring continuously for another 5-8 minutes. Pour in the wine, salt, season with pepper and simmer the minced meat until tender. At this time, wash and cut the tomatoes into thin slices. Prepare the sauce by melting the butter in a saucepan and combining it with flour.
Step 3
Stir the resulting mixture continuously to avoid the formation of lumps, pour in the milk a little later and cook until thickened. Add a pinch of nutmeg for more flavor. In a slightly cooled sauce, add the beaten eggs and mix thoroughly. Layer in a baking dish: eggplant, half of all cooked cheese, minced meat with onions and garlic.
Step 4
Tomatoes will be the final layer, then pour the sauce over the moussaka and cover with the cheese. Place the moussaka in an oven preheated to 180 degrees and cook the dish for 40 minutes.
