Perhaps not everyone knows what fondue is. The homeland of this dish, which is prepared by the whole company in the so-called fondue dish, is Switzerland. Each canton has its own original recipe. In Europe they like to cook fondue at home parties, children's parties.
A little about fondue
Fondue is made from meat, fish, cheese, chocolate. Sweet fondue is prepared in a fondue pot, which is a fireproof pot. The chocolate is melted and in order to keep it hot, an alcohol lamp is arranged under the pot. On the guests' plates there are pieces of fruit, muffins and long forks. Each string a piece on a fork and dipped in chocolate. Such a treat is often arranged for children at children's parties, of course, under the guidance of adults.
Now in Russia, the company's employees, who are invited to organize a children's birthday party at home, arrange something like a chocolate fondue. This treat is called a chocolate fountain.
Cheese fondue is very common in Switzerland. This recipe appeared a long time ago. In winter, on a cold day, if there was nothing at home but bread and cheese, they made fondue. Each canton sticks to its own choice of cheese. Cheese is melted in fondue and served with crispy French baguette. Its pieces are easily strung on a fork and dipped in cheese. When a crispy crust remains at the bottom (make sure that the bottom does not burn), it is given to the most respected guests or divided equally among those present. A bottle of good wine is served with the dish.
Meat fondue is prepared in different ways, often serving together pieces of meat, poultry and fish. Both traditional and modern electric fondue makers are used to evenly heat the contents.
A few hours or a day before the arrival of the guests, the meat is cut into small pieces and put in the marinade. The meat can be beef, venison, pork, duck with pepper fondue and chicken breast are also prepared. Before putting the meat on the plates, it is soaked with a napkin.
The meat fondue in boiling oil is called Bourguignon. If there are few guests, everyone settles down next to the electric stove. Of course, it is more convenient to cook in a fondue dish, but you should buy it from a good company. The meat is strung on a fork and dipped in oil boiling in a fondyushnitsa.
Broth can boil inside the pot instead of oil; when dipping pieces of meat into the broth, there will be no strong splashes and the meat will not burn.
You can diversify fondue with sauces. In a set with fondue, special cups for sauces are sold. There are usually several sauces, in which guests dip fried meat pieces.
Water must not get into the kettle with boiling oil. Before frying, the meat must not be salted.
Grilled vegetables, olives and gherkins are served as a side dish. Natural red wine is suitable for meat. Sauces can be made different, depending on who loves what. You can make tomato sauce with basil and other herbs, from yogurt without fillers - with dill and garlic, as well as cheese. You can use ready-made sauces from the store.
Beef fondue recipe
Ingredients:
- 1.5 kg beef fillet or tenderloin;
- vegetable oil;
- butter;
- Caucasian dry herbs;
- soy sauce;
- a pair of onion heads.
Cut off fat from meat. Cut the beef into small cubes. Place in a bowl. Add finely chopped onion, Caucasian dry herbs and soy sauce.
Do not make the marinade too thin and do not put a lot of dry herbs, they will burn in the oil. Do not salt!
Put in the refrigerator for 3-6 hours. During this time, sauces can be prepared. Take the meat out of the refrigerator, dip it with a napkin and arrange it on plates along with forks (you can put two forks for each, long and regular). Put the sauces on the table.
In a saucepan, pour a volume of oil equal to half the fondue pot. If you are using a mixture of oils, add ½ part butter to 1 part vegetable oil. Heat oil on the stove. You need to heat over low heat until the mixture acquires a golden color.
Pour the oil into a fondue pot. Put it on the table, turn on the heat source to maintain the temperature. Beef cubes are strung on a fork, immersed in oil and kept there for 2-3 minutes until cooked. Put the meat on a plate. It is dipped in sauce and eaten with an ordinary fork.
Sour cream mustard sauce for fondue:
Ingredients:
- 230 g sour cream;
- 230 g of mayonnaise;
- ¼ cups of mustard;
- 1 tablespoon of finely chopped onion;
- 4-5 drops of Tabasco hot sauce;
Mix all ingredients until smooth and refrigerate.
