Step 1

Harvest 10 kg of rowan berries: pick rowan berries after the first frost, usually in early November. You can also use berries harvested before freezing. To remove the bitterness from them, put the berries in the freezer for 8 - 12 hours, or cover with boiling brine (10% salt) for five minutes, then rinse thoroughly with cold water.

Step 2

Grind the mountain ash in a blender, put in a large bowl, press, add 10 liters of water, 2 kg of sugar, 20 g of diluted yeast and leave to ferment. After five to seven days, separate the juice with a juicer or sieve. Put 1, 4 kg of sugar in the juice, bottle, store in a cool place (watch out for sediment formation during the aging period, drain the wine, preventing sediment decomposition).

Step 3

Add winter apple juice to the wort: pour the chopped mountain ash with eight liters of water and two liters of apple juice, then follow the recipe (adding apple juice improves the taste of the wine).

Step 4

Prepare rowan wine in a different way. Prepare rowan fruits in the same way as described above. Pass ten kilograms of berries through a juicer, pour the pulp with five liters of warm water (23 - 25 ° C), mix, add twenty grams of yeast, leave to ferment for two or three days at a temperature of 25 ° C, put the juice in the refrigerator.

Step 5

Strain the fermented liquid, mix with fresh juice, add one kilogram of sugar, leave to ferment for two or three days, then strain the wort again and add another kilogram of sugar. Cover the necks of the vessels with gauze, do not allow dust and debris to enter. Drain wine, bottle, store in a cold place.

Step 6

Drain the wine again after a few months when sediment appears. Soak the rowan wine for two years.
