Many sauces are suitable for fish, one of them is Muslin. Even the most ordinary fish dish with it will become much tastier. Muslin sauce is prepared in half an hour.
It is necessary
- For six servings:
- - 750 ml of fish broth;
- - 50 g butter;
- - 2 tbsp. tablespoons of wheat flour;
- - 1 egg yolk;
- - 1 egg white;
- - salt to taste.
Instructions
Step 1
First, melt the butter in a small ladle, add flour, slowly pour in the fish broth, whisking the mixture with a whisk. Remove the ladle from the stove, continue whisking. The sauce should be smooth.
Step 2
Return the ladle to the stove, cook for 4 minutes, stirring occasionally. Season to taste.
Step 3
Now transfer the sauce to any refractory dish, place in a large saucepan, into which you have previously poured hot water. Keep the sauce warm.
Step 4
Whisk the egg white well, add the yolk while whisking. Pour the egg foam into the sauce. Serve the Muslin sauce with the fish immediately in a slightly warmed gravy boat.
