Muslin is a very delicate and tasty cream that is suitable for various desserts. It holds its shape well, is flexible, has a silky texture, is dense enough, lends itself well to coloring and aromatization. The cream is not too greasy, it tastes very good. Due to the high content of butter in the cream, it is worth storing it in the refrigerator before use.
Products that are necessary for making muslin cream:
- 2 yolks;
- 3 level tablespoons of sugar;
- 1 level tablespoon flour;
- 1 spoon of starch;
- 1 glass of milk;
- 100 g butter;
- some rose water or rose essence (optional);
- food coloring (if you want to make a colored cream).
Use room temperature yolks and butter to make the cream. The quality of the oil should be very good.
Preparation of cream muslin:
Mash the yolks with sugar.
Add flour and starch, stir until smooth without lumps.
Bring the milk to a boil, add it in a thin stream to the yolk mixture. This moment is the most difficult, as the yolks can curl. Add milk little by little, stirring well.
Put the mixture on low heat and steam until thickened. Add food coloring.
Close the dishes tightly, leave to cool completely. Add rose water.
Add butter in small portions to the cooled mass and beat.
