- Dough:
- - 200 g of wheat flour,
- - 100 g of sunflower oil,
- - 40 g raisins,
- - 50 g of milk,
- - 1 teaspoon of ginger,
- - 2 tsp baking powder,
- - 200 g carrots,
- - 100 g of sugar,
- - 1 egg,
- - 1 g vanillin,
- - 1 teaspoon of ground cinnamon.
- Cream:
- - 170 g cream cheese,
- - 55 g butter
- - 50 g of icing sugar.
- Decor:
- - 1 carrot,
- - confectionery sprinkles to taste.
Instructions
Step 1
Turn on the oven for warming up (temperature 160 degrees).
Step 2
Combine flour and baking powder, sift several times into a large container. Add vanilla sugar to flour along with ground cinnamon and ground ginger, stir well.
Step 3
Break an egg into a bowl, add sugar, beat. Add 100 grams of sunflower oil to the beaten egg mass and beat again. Mix the resulting mass with the dry mixture.
Step 4
Grate the peeled carrots, then mix them with the carrots. Pour in the warmed milk and stir.
Step 5
Rinse the raisins and soak in boiling water for ten minutes. Then add it to the dough and stir.
Step 6
Divide the dough into prepared molds. Bake for about half an hour, check the readiness of the dough with a toothpick. Transfer the muffins to a plate and cool.
Step 7
While the muffins are cooling, prepare the cream. Combine cream cheese, softened butter and powdered sugar in a bowl. Transfer the cream to a pastry bag and decorate the cupcakes. Put some carrots on the cream and sprinkle with sprinkles - if desired. You can make figures from carrots and decorate cupcakes with them.
