To make lemon jam at home, it is recommended to choose dense, juicy and large fruits with a smooth skin. Lemons are considered to be good preservatives, especially in combination with granulated sugar. Therefore, you can use ordinary glass jars with plastic lids for making jam. Prepare the necessary dishes and wash them thoroughly in a baking soda solution, then rinse and scald with boiling water, dry completely. To prevent glass jars from cracking from hot jam, place them in an oven preheated to 110 ° C.

So, take purchased lemons with intact skin and wash them with cool water. Then pat dry with a cotton towel and trim off the edges on both sides. Then cut the lemons in half and remove all seeds. Next, cut the lemon halves into four equal parts. Cut each piece very thinly. It is not recommended to use a blender or meat grinder to grind lemon, otherwise you will not be able to get the jam of the desired consistency.

Put finely chopped lemons in a wide saucepan (you can use a basin) made of stainless steel or copper, cover with water and put on fire. Add granulated sugar and a pinch of sea salt to the lemon mass, mix well. Bring mixture to a boil, reduce heat, simmer for five minutes. Stir the lemons constantly with a wooden spoon or spatula, remove the formed foam with a slotted spoon made of antioxidant materials. Then remove the almost finished jam from the heat; this cooking time is usually enough for it to acquire the desired consistency.
Step 5
You can check the readiness of the lemon jam. To do this, pour a little jam in a saucer and send it to the freezer for a few minutes. Then put your finger in it. If the jam is ready, then it should harden. If the lemon delicacy is still liquid, then you should cook it for a few more minutes. Add a little liquor to the finished jam for flavor and stir, place in sterilized glass jars and cover with lids. These blanks can be stored in a dry, dark and cool place for several months.
