  • - 2 red chili peppers, cut in half

  • - 2 cloves of garlic, cut in half

  • - zest of 1 lime
  • - 1 tbsp. l. thai fish sauce
  • - 400 ml coconut milk
  • - 1 tsp. Sahara
  • - 1 tbsp. l. vegetable oil
  • - 500 g skinless monkfish fillet, diced
  • - 250 g haddock fillet, diced

Instructions

Step 1

Place chili, lemongrass, onion, garlic, ginger, cilantro, zest (leave a little for serving), fish sauce, 6 tablespoons of coconut milk, and sugar in a blender or food processor, and grind into a smooth paste.

Step 2

Heat the oil in a wok or skillet and add the paste. Cook for 2 minutes. Pour in the remaining coconut milk, bring to a boil and cook over low heat for 5 minutes.

Step 3

Add the fish and stir gently to distribute the sauce evenly. Simmer until tender. Stir regularly; try not to crush the fish.

Step 4

Serve curry in small bowls, sprinkled with cilantro and set aside lime zest.
