Ground turkey meat is a healthy alternative to the fattier ground beef. It has an intense flavor and is perfect for a variety of meatloafs, sauces, cutlets, meatballs and casseroles.
Turkey meatballs with tomato sauce and pasta
For this aromatic and satisfying dish, you will need:
- 300 grams of turkey mince;
- 2 heads of onions;
- 50 grams of bread crumbs;
- 50 ml of milk;
- 1 teaspoon of thyme leaves;
- 1 tablespoon flour;
- 1 clove of garlic;
- 400 grams of chopped meaty tomatoes;
- 100 ml of water;
- 1 tablespoon tomato paste;
- 2 teaspoons of sugar;
- ¼ teaspoon dried oregano;
- 250 grams of spaghetti;
- salt and freshly ground pepper;
- vegetable oil;
- chopped basil greens.
Cut the onion into small cubes. Sauté the onions in a deep, wide skillet until translucent. Soak bread crumbs in milk. Leave half of the onion in the bowl, add the chopped tomatoes and minced garlic and cook, stirring occasionally, for about a minute. Pour in water and tomato paste, add sugar, oregano, season with salt and pepper. Bring to a boil, cover and simmer for about 7 minutes. Combine the minced meat with the thyme, the crumbs soaked in the milk, the remaining onions, and season with salt and pepper. Form the meatballs, roll in flour and sauté in vegetable oil until golden brown. Place in tomato sauce and simmer for 7-10 minutes. During this time, boil the pasta until tender. Drain any excess liquid from pasta, toss with sauce and meatballs and serve sprinkled with herbs.
You can add one grated sour apple to the minced meatball, so the taste of the dish will be more intense.
Ground turkey loaf
To make a meatloaf, take:
- 750 grams of turkey mince;
- ¼ glasses of bread crumbs;
- 1 chicken egg;
- ½ onion head;
- 2 tablespoons of milk;
- ¼ cups of ketchup;
- salt and pepper.
Preheat oven to 200C. Chop the onion. Combine the ground turkey with breadcrumbs, add milk and 2 tablespoons of ketchup, chopped onions, and season with salt and pepper. Form a roll on a foil-lined baking sheet and brush with the remaining ketchup. Bake for 30-40 minutes.
This roll can be served hot, with mashed potatoes, or cold, cut into slices and put on fresh bread.
Ground turkey pie
You can make a delicious and quick pie from ready-made puff pastry and minced turkey. You will need:
- 600 grams of turkey mince;
- 1 head of onion;
- 2 cloves of garlic;
- 6 slices of bacon;
- 75 ml of cognac or calvados;
- 2 tablespoons of chopped parsley;
- a pinch of ground ginger;
- a pinch of ground nutmeg;
- 50 grams of chopped roasted pistachios;
- 20 dried apricots berries;
- 2 chicken eggs;
- 50 grams of bread crumbs;
- 200 grams of puff pastry.
Roll out the dough into a layer one centimeter thick and with sides of 25 and 50 centimeters. Preheat oven to 200C. Chop the onion and bacon into small cubes, chop the garlic. Saute the onion and garlic until translucent, add the bacon and cook for another 5 minutes. Pour in the alcohol and let the alcohol evaporate. Chill this mixture and mix with minced meat, put one egg, crackers, spices and eggs in the same place. Form the minced meat into a sausage and place in the center of the dough. Glue the edges together, turn the cake seam side down, cut diagonally, and brush with a beaten egg.
