Manty is the most popular dish of the inhabitants of Central Asia, Pakistan and Turkey, where the recipe for their preparation came from China. Translated from Chinese "manti" or "mantiou" means "steamed bread." How is it correct to eat this juicy and tasty dish, reminiscent of classic Russian dumplings?
Instructions
Step 1
Manty is cooked on a special grid, which is placed at the bottom of a large pot called "mantis". The meat filling for classic mantas is made from horse meat, beef or camel meat, but sometimes chefs mix mammalian meat with poultry meat, designed to enhance the taste of the dish. At the same time, the minced meat is not scrolled in a meat grinder, but carefully chopped with a sharp knife - this way the filling retains its juiciness and original taste as much as possible.
Step 2
To enhance and enrich the taste, finely chopped pumpkin, wild garlic and onion are also added to the manti. Real manti, like Georgian khinkali, cannot be imagined without a fragrant meat broth inside - Russian chefs put a piece of fresh bacon in the filling, and eastern ones - a piece of camel's hump or udder. In the process of steaming the mantas, these additives turn into a delicious meat gravy. In Russian cuisine, this dish is often simplified by using traditional pork as a filling, replacing the pumpkin with any other vegetables and cooking it not in a double boiler, but in boiling water.
Step 3
Usually manty is eaten with the help of hands. First of all, you need to bite the mantu and gently drink hot broth from it. If they are round and open, made in the form of a small cup, the broth is drunk directly from their neck. Sour cream, mustard, ketchup or butter are traditionally served with mantas, as well as hot or hot spices prepared according to folk recipes. In addition, a fresh vegetable salad of finely chopped red / yellow peppers, tomatoes and garlic is great for this dish.
Step 4
Spicy lovers can additionally pepper the ready-made manti or add a little vinegar to them, since they are prepared from unleavened dough without the use of yeast and milk. Also, vegetable oil, in which onions were pre-fried, or mayonnaise mixed with ketchup and a small amount of garlic juice, are suitable as a sauce. It goes well with soy sauce or horseradish. Well-brewed green tea is usually used for drinking mantas.
