Transfer the peas to a saucepan, pour in a liter of water. You can pour boiling water or cold filtered water. Bring to a simmer over high heat. Skim off the foam before boiling. Make sure that no foam escapes from the pan at all times.

Reduce the heat to low and cook the porridge until the peas are soft. The cooking time will depend on the variety of peas. The minimum time for crushed peas is 40 minutes to an hour.

Split peas are cooked from an hour to 2.5 hours. Whole peas can be cooked for up to three hours.

Step 6

During cooking, the porridge must be stirred periodically. Add salt to the porridge 15 minutes before the end of cooking. If the peas become soft after boiling, do not fall apart in the puree and remain intact, grind them into porridge with a blender. Serving pea porridge to the table, you can complement it with fried mushrooms, onions, bacon or cracklings.
