Step 1

Sort out dried seaweed, put on a sieve and rinse with warm boiled water. Transfer to another container and fill with fresh water at a rate of 1: 8 (one part kelp, eight parts water). Leave the seaweed to soak for ten to twelve hours.

Step 2

Rinse the kelp thoroughly in running water, place in a saucepan, cover with hot water in the same ratio of 1: 8 and put on medium heat. After boiling, boil the seaweed until tender for thirty to forty minutes. Then drain the broth.

Step 3

For double cooking, pour the kelp washed after soaking with water 1: 4 (one part of seaweed, four parts of water), boil after boiling for about thirty minutes. Throw the kelp in a colander, and drain the broth. Pour hot boiled water over the seaweed and boil for another half hour. Catch the kelp with a slotted spoon, refrigerate and use for cooking various dishes: borscht, pickles, soups, salads, stews, cutlets and casseroles.

Defrost frozen seaweed before cooking. To do this, immerse it for thirty minutes in cool water (15-20 degrees). Then rinse very thoroughly with plenty of water.

Pour the kelp with cold water at a rate of 1: 2, put on high heat and bring to a boil. Boil for fifteen to twenty minutes and drain the broth. Repeat this procedure two more times. Three-fold heat treatment of seaweed will significantly improve its taste.

Step 6

Canned seaweed is ready to eat. But it is also recommended to boil it for about five minutes.

Step 7

Pickled seaweed. Boil water, add sugar, salt, cloves, bay leaves and cook for ten to fifteen minutes. Cool the marinade and pour in the vinegar. Chop the boiled seaweed with noodles, cover with cold marinade and put in a cool place for eight to ten hours to marinate. Kelp prepared according to this recipe can be served as a side dish to vegetable and fish dishes, added to salads.
