Dried fruits, however, like any other products, have their own storage rules. Subject to these rules, dried fruits will not lose their beneficial properties for a long time and will not lose quality. Proper storage will help prevent insect pests and mold.
Dryness and coolness
Heat and humidity are the primary enemies of dried fruit. Therefore, the place for their preservation should be dry and cool. The ideal temperature is 10 degrees, it is this temperature that will allow the products to retain all their useful qualities and not change the taste.
Separate storage
Even if dried fruits are to be used as a mixture for making compote, it makes sense to store them separately from each other. The fact is that each fruit or berry has a different moisture index from others, and the combination of dry and wetter dried fruits will lead to their deterioration. If, for some reason, the products will be stored together, then their moisture index should be leveled by drying at room temperature.
Drying in the oven
If the fruits have been washed in large quantities, then for storage they must be dried first at room temperature, and then at a minimum gentle temperature in the oven. This is the only way to protect yourself from mold, which will not slow down to appear in undried berries or fruits.
Storage utensils
You can store dried fruits in glass, ceramic or wood. Boxes and cans must be tightly sealed. But the best and most environmentally friendly storage option is cotton or canvas bags.
Good helpers - salt and mint
If you are not sure that the dried fruits are well dried, then you need to add mint sprigs to them, pack them in a canvas bag and hang them for ventilation. This will definitely protect against mold and insects. If dried fruits are stored in a kitchen cabinet, then salt should be put there in an open container, it will quickly absorb moisture.
Stock check
Dried fruits should be checked periodically for insects. When bugs are found, the fruits are calcined either in the sun or in the oven at 75 degrees. You can freeze them, but then you still have to dry the food.
Storage periods
Dried fruits bought on the market and dried in natural conditions are not stored for more than a year.
There should be a measure in everything
Don't stock up on a lot of dried fruit. It will be most convenient to buy them as needed, otherwise some of the products will sooner or later have to be thrown away.
