It is very important to thoroughly sort and clean the collected forest gifts before cooking.

The very first stage of cleaning should take place in the forest. Professionals recommend immediately cleaning mushrooms from leaves, dust and large debris so that there is less work at home. If the leg or cap turned out to be eaten by insects, then you should cut them off without sparing.

The second stage takes place at home. Mushrooms should be dipped in cold water, with a pinch of citric acid dissolved in it. This will protect the product from browning. In general, no more than 5 hours remain for processing, because freshly cut mushrooms can spoil very quickly.

If you could not manage to process the collected mushrooms, then you should not contrive and try to cut off the bad edges. Throw away such products immediately. It's very dangerous to joke with mushrooms.
