There are many recipes that require the separation of eggs into yolk and white. It is not at all necessary that one thing should be present in the selected dish, it happens that you first need to introduce the yolks and only then the whipped whites. Or a crumbly shortbread dough is kneaded on the yolks, and the almost finished cake is covered with an air meringue. However, it doesn't matter at all how you are going to use the separated egg, you still have to separate the whites from the yolk first. Instructions
Step 1
With the help of eggshell
Hit the egg at the top with a knife or other flat handle. Your task is to crack the egg so that its upper half is smaller than the lower one. Carefully remove the top half. Hold the top half next to the bottom and strain the egg white through the gap between them into a bowl. Pick up the egg yolk on the top half of the shell. Some "strands" of egg white can be particularly stubborn, use a fork to help them. Dip the yolk into the prepared dish.
Step 2
With holes
With a special device or an ordinary pushpin, make two holes in the egg - at the top and at the bottom. Expand the bottom slightly with the tip of a knife. Hold the egg over the bowl as the egg white slowly flows out of the lower, wider opening. Beat off the top half of the shell and pour the yolk into another bowl.
Step 3
With your fingers
Wear thin disposable sterile gloves. Place your hand with the egg over the egg whites bowl and break the shell. Remove the shell with your free hand. Allow the protein to slowly drain between your fingers. Roll the yolk in the palm of your hand to drain all the white without leaving residue. Drop the yolk into a separate bowl.
Step 4
With a separator
Place the separator in a suitable bowl. Break and release the egg into it so that the yolk is in the middle and the white flows freely around the edges. Wait for all the protein to drain out through the slots in the separator. Place the yolk in another bowl.
