It is necessary
- - dandelion flowers - 200 pcs.
- - sugar - 3.5 cups
- - lemon - 1 pc.
Instructions
Step 1
Soak dandelion flowers for 10 minutes, then rinse thoroughly, without separating the green cup, in several waters. Then pour 0.5 liters of water over the dandelions and bring to a boil. Boil for 3 minutes, then cover the dandelion broth tightly with a lid and leave overnight.
Step 2
The next day, strain the broth as follows: put a piece of thick cloth in a colander and pour the broth over it along with the dandelion flowers. Squeeze flowers in the fabric and discard. Add sugar to dandelion broth and heat. Stirring continuously, bring the broth to a boil.
Step 3
Cut the lemon in half and squeeze the lemon juice into the boiling syrup. Cut the rest of the lemon into slices and add to the syrup. Lemon juice and zest keep the dandelion honey from becoming sugared and also make the honey tastier and more aromatic. Boil the dandelion syrup for 40 minutes.
Step 4
Prepare jars and lids for honey rolling. Sterilize jars and lids: by steaming or dipping each into boiling water. Remove the lemon slices from the honey before pouring it into the jars. Pour hot dandelion honey into jars and close with sterile lids.
