Cherry, which has become the basis of one of the world's most popular liqueurs, grows in Croatia. For many years, it was this country that had the preferential right to manufacture Maraxino.

Now such cherries have begun to be cultivated in other countries, for example, in Slovenia. According to its external characteristics, it differs from the same sweet cherry in more astringent taste and small size. It is this variety that is in great demand on the alcoholic beverages market, since it is with the help of the bright rich taste of cherries that many cocktails, liqueurs and other alcoholic beverages can be prepared.

It is in this amazing variety of cherries - maraschino - that the seeds are absent.

These wonderful berries are not only processed for drinks, but also put directly into the cocktail glass. With such a filling, the drink becomes tart, and at the end you can just eat this cherry and not be afraid that you will choke on the bone.

Surprisingly, unlike the cherries that went into production, the liqueur looks absolutely transparent. It smells like bitter almonds with hints of maraschino cherry.

In the process of producing cherry liqueur, a distillation method is used, which includes evaporation of a liquid, then cooling, after which the dispersion goes through a vapor condensation path. This process produces a flavored alcoholic beverage.

To prepare the Maraschino liqueur, the cherries are crushed until a homogeneous mass is placed, which is placed in specially prepared barrels made mainly of Finnish ash. There, for two or three years, the liqueur is infused in order to obtain its rich taste and almond-cherry aroma, after which it is filtered and bottled.

Drinking liquor

This drink has many uses. It, of course, can be consumed in its pure form, but it is also very often added to cocktails and coffee, and poured with such a drink on desserts in the form of ice cream or cakes.

Soaked cherries today can increasingly be found not in cocktails, but in confectionery.

The process of making maraschino cherries, for example, for cocktails, takes place in stages. First, the cherries are soaked for a month in a special chemical solution that contains quicklime and sulfur dioxide, of course, in small percentages. After soaking the berries become completely white, then they are again soaked in water to rid the berries of harmful chemicals. Then, with the help of sodium bisulfite, they are given a dense structure, and in order to return the berries to a bright red hue, they are colored with food dyes. The final stage will be soaking them in sugar syrup with the addition of almonds, which is why the liquor has such a mixed smell.
