Mashed soups, as a rule, are boiled in a decoction of cereals, vegetables, in meat broth, or on a mixture of these decoctions. They may include such products as meat, poultry, fish and various vegetables: zucchini, cauliflower, pumpkin, potatoes, carrots, green peas.

You can rub the products used for making pureed soups through a sieve or grind in a mixer until a homogeneous consistency is obtained. Pass those products that do not boil well through a meat grinder with a fine grid 2-3 times. Then rub the resulting mass through a sieve. Grind the cereals in a coffee grinder or mortar.

To make pureed oatmeal soup, sort the oatmeal, rinse it, pour boiling water over it and cook until cooked. Strain the resulting broth, wipe the cereal through a sieve and mix it again with the broth. Add hot milk to the soup, bring to a boil and remove from heat. Shake a raw egg in a bowl or small ladle and season with hot soup. Add salt, sugar or butter to the mashed dish.

For mashed potato soup, peel, wash and boil the potatoes. Pour the potato broth into a small saucepan, and wipe the potatoes through a sieve. Then go to make a special sauce. Dissolve the flour in two to three tablespoons of potato broth, boil the resulting mass and strain. Next, mix the broth, sauce and mashed potatoes, add the raw egg and butter. Stir the soup thoroughly, boil it and salt. Before serving, season the dish with sour cream and garnish with finely chopped herbs.

Mashed oatmeal soup with vegetables in meat broth is very useful. Preparing it is not at all difficult. Pour the rolled oats into boiling water and cook until completely boiled over low heat for at least an hour. Thoroughly rub the groats through a sieve. Then peel, wash and cook potatoes and carrots in meat broth. Wipe the vegetables through a sieve and mix with chopped cereals. Pour the resulting mass with meat broth and bring the soup to a boil, then salt.
