In hot weather, you don't want to eat heavy and hot foods, so we prefer light snacks and salads. But for lunch, you can continue to eat the usual soup, but it's better if this soup is cold.

Step 1

There are quite a few recipes for cold soups. Try to cook at least a few and you won't regret it. Cold soups will be an important part of your summer menu because they are filling and light and refreshing at the same time.

Chill - cold summer beetroot soup.

Take large beets and boil them over low heat for an hour, then grate them on a fine grater. Cut 2 fresh cucumbers into cubes, 4 boiled eggs must be chopped or grated. Chop green onions and dill finely. Put all the products in a saucepan and fill with a liter of kefir. You can pepper the soup to taste.

Chill is a great alternative to okroshka, and it's also a very healthy soup.

Cold spinach soup.

Bring 1 liter of water to a boil, put chopped spinach leaves (150g) in boiling water, let them boil. Then gently pour the beaten raw egg into the boiling water, stirring the soup constantly. Cook for 2 minutes, then remove the soup from heat, cool and refrigerate. Add 2 chopped fresh cucumbers, green onions, dill to the cold soup. Season with salt, add a little sugar and season the soup with sour cream (200g).

Cold Spanish soup Gazpacho.

Cut the following vegetables into small pieces: tomatoes - 4 pcs, cucumbers - 3 pcs, Bulgarian pepper - 1 pc, onion - 1 pc, garlic - 2 cloves. Put all vegetables in a blender, add 100 ml of olive oil, salt to taste, beat in a blender. The soup is ready to serve!

Step 4

Cold green soup.

Grate 3 fresh cucumbers. Mix 1 liter of kefir with 0.5 liters of cold water, add a little garlic grated on a fine grater, salt and pepper, add 4 tbsp. vegetable oil. Put grated cucumbers in a plate, sprinkle them with chopped herbs (parsley and dill), fill with kefir. When serving, the soup can be garnished with crushed walnuts.

This soup is a national Bulgarian dish and it cooks very quickly!
