Pancakes are one of the favorite dishes of Russian cuisine, there are dozens of ways to prepare and serve pancakes, not to mention a variety of fillings and sauces. Beautifully rolled pancakes can be a true decoration of any table.

Step 1
Closed tube
Place the filling on the top third of the pancake, fold the edges to the right and left, and fold the top edge so that the filling is underneath. You now have a rectangle with one jagged bottom edge that is not curled inward. Wrap the pancake, starting from the top edge, - you get a tube, closed on both sides.
Step 2
Envelope
Place the filling on the top third of the pancake, cover it with the top edge, then fold the pancake to the right and left so that the edges of the folds converge in the middle. Fold the resulting quadrangle in half along a transverse line.
Step 3
Double triangle
Place the filling in the center of the pancake, fold the top edge so that the fold reaches the center, then fold two more edges in the same way, the second and third parts of the circle - you will get an equilateral triangle with the top down. Fold the bottom corner so that the top reaches the opposite edge, then fold the right and left corners to cover each other. You have a smaller triangle than the first, but the filling will not fall out of it.
Step 4
Pouch
Place the filling in the center of the pancake, gather the edges and tie on top to form a pouch. You will choose the material for the "tie" depending on the filling: if the filling is salty, the bag can be tied with a feather of green onions, if it is sweet, then you can take a ribbon from orange peel.
Step 5
Roll
Take a large-diameter pancake, brush it with sour cream sauce, put a slice of finished fish in the center, roll the pancake into a roll and cut it obliquely into two or three parts with a sharp knife.
Step 6
Simple straws and envelopes
Roll the pancake into a tube or envelope, folding it first in a semicircle and then in a triangle. Serve the pancakes folded in this way with liquid fillings (sour cream, jam, yogurt, condensed milk, honey), which are placed on the table in a separate bowl.
