Sometimes you want delicious pancakes for breakfast! And when the cook figured out the dough, warmed up the frying pan and poured the first ladle onto it with anticipation, the question arises - what to do next and how to fry the pancakes on both sides?

Instructions
Step 1
First, check that there are as few lumps as possible in the dough. The dough itself should not be very thick or very runny. If it seems too runny, add flour, too thick add milk. Preheat the skillet and drip a little sunflower oil so that it spreads over the entire diameter of the pan. Take a ladle and scoop up the dough. Lift the pan and pour out the dough, starting in the center. Keep it tilted and slowly tilt it in different directions so that the dough spreads evenly over the entire diameter. The most convenient way is to use a ladle with a spout through which you can pour the dough.
Step 2
If the pan has been hot before, reduce the heat. Before turning, you need to check how the pancake is baked. It can be turned over when the dough is ready at the edges, and in the middle it is not yet fully baked. Take a thin spatula (or thin wide knife) and pry the pancake over the edges. See if the pancake is golden and crispy. If the pancake looks like this, then you can turn it over. If not, wait some more time until the pancake acquires the described condition.
Step 3
So, the pancake can be turned over. Use a wide spatula to do this as well. To begin with, pry the pancake around the edges, as you did before, to check its readiness. Only now pry the pancake almost to the middle, already getting ready to turn it over. If the pancake is stuck and does not want to come off, pry it gently and a little at a time.
Step 4
When the pancake comes off the pan easily, you can turn it over. Slide the entire spatula under it in the center. Thus, the entire pancake, except for the edges, will be on the spatula. Lift the pancake spatula over the skillet. The edges of the pancake will hang down on either side of the spatula. Move the spatula and pancake away from the pan so that it is only partially over the pan. For convenience, hold the pan by the handle. Flip the pancake over with a quick, sharp motion towards the pan. The second side will be ready much faster than the first.
Step 5
If it is difficult to turn over with one spatula, you can use two. The second does not have to be as wide.
Use a wide spatula to pry up the pancake as described above. Slip a wide spatula under the pancake almost to the middle. Press down on top with a second spatula before lifting the pancake over the pan. You can also use a fork instead of a spatula. With two spatulas already, lift the pancake above the pan and gently turn it over to the other side. Act as if you are holding split forceps.
Step 6
You can also use tongs to turn the pancakes. First, as described above, pry the pancake up to the middle with a spatula. This must be done in order for the pancake to peel off from the pan. Then use tongs to grasp the pancake on either side, lift it over the skillet and gently turn it over. In contrast to the method with one spatula, no sudden quick movements are needed.
Step 7
After the pancake is completely cooked, remove it from the pan using a wide spatula as well. The edges of the pancake may be a little dry. Brush them or the whole pancake with a little ghee. You can proceed to the next pancake. When flipping the pancakes with one spatula is easy, start practicing flipping the pancake upwards.
