Beets are good for everyone - they are tasty, healthy, low-calorie, they are cheap, and you can find them in any grocery store. In salads, beets can be used boiled, raw and pickled. And it is combined with a wide variety of products.

- For boiled beetroot salad
- 1 large beet;
- 100 g of prunes;
- 100 g of walnuts.
- For the sauce in the boiled beet salad
- 1 raw egg yolk;
- 1 teaspoon mustard
- 2 tablespoons olive oil
- 1 teaspoon lemon juice
- 1/4 teaspoon salt
- pepper to taste.
- For raw beet salad
- 2 small young beets;
- 1 large pear;
- 100 g feta cheese;
- 4-5 mint leaves.
- For raw beet salad dressing:
- 1 tablespoon olive oil
- 2 teaspoons lemon juice
- salt to taste.
- For pickled beetroot salad
- 1 large beet;
- 1 fresh cucumber;
- 3 radishes;
- 1 onion head;
- 1 tablespoon olive oil
- For the marinade
- 1 liter of water;
- 2 cloves of garlic;
- 1 tablespoon of 5% table vinegar;
- a teaspoon of salt;
- 1 rounded tablespoon of sugar.
Instructions
Step 1
Boiled beetroot salad
Wash the beets thoroughly. You do not need to peel it and cut off the root. This will save more vitamins. Put it in boiling water and cook for about 15-20 minutes if the root vegetable is small. The larger the beets, the longer it takes to cook.
Step 2
Make a salad dressing while the beets are cooking. Put one raw yolk in a bowl, add mustard, salt and pepper and stir thoroughly. Pour the olive oil into a bowl and whisk the mixture. When the mixture is smooth, add a little lemon juice, salt and stir.
Step 3
Cool the beets, peel them and grate them on a coarse grater. Chop the prunes into small pieces and chop the walnuts. Stir all ingredients and season with sauce.
Step 4
Raw beet salad
Peel the young beets and cut into thin strips. Peel the sweet and sour pear and cut into strips as thin as possible. Sprinkle the dressing on the beets and pear and stir.
Step 5
Combine olive oil and lemon juice, add salt and a few drops of balsamic vinegar. Place pear with beetroot, chop feta cheese on top and garnish with mint leaves.
Step 6
Pickled beetroot salad
Cut raw beets into thin strips and place in a jar. Put a liter of water on the fire, bring to a boil, put chopped garlic, salt and sugar in the water. Remove the pot from heat and add vinegar to the water. Pour the resulting marinade over the beets and let it cool. Place the jar of pickled beets in the refrigerator for 24 hours.
Step 7
Cut fresh cucumber and radish into thin strips. Cut the onion into half rings. Mix everything in a deep plate. Remove the beets from the jar, squeeze them out and place them on a plate. Season vegetables with salt, add some olive oil and stir.
Step 8
If you decide to make a salad with raw beets, use small young root vegetables. Then the salad will turn out to be tender and tasty.
